If you follow me on social media, you’ve probably seen the green smoothie I make at least five times a week. I’ve dubbed the green girl the “Urbanista Girl Smoothie” haha. I used to always make this on the weekends, especially after a night of over indulging, but now that I’m home for breakfast, its become quite the daily staple. Its super important to me right now to focus on nourishing my body with food that makes me feel good, both inside and out. This helps tremendously with mental health during this hard time we’re all going through on some level.
This smoothie is not really for the faint of heart, it is a green smoothie after all. BUT, even Kyle craves it now! It takes some getting used to. With the mixed flavors, it’s actually not as potent as a usual green juice, and the Vitamix makes it super creamy. No grainy or lumpy smoothies here. Having grown up with parents that were juicing and making veggie smoothies since the 1990’s (when it wasn’t “in”) — has definitely trained my taste buds. My Dad would literally juice every morning growing up, and as you could imagine, my 13 year old self was miserable every time the damn thing went off at 7am while my pre-teen self wanted to sleep til noon. Thanks, Dad. 😉
Here it is! The Urbanista Girl SmoothieÂ
*I highly recommend using a Vitamix for this. It’s definitely an investment, but I haven’t found any blender or food processor that makes smoothies so creamy. I usually use this tool two times a day in my kitchen!Â
Serves 2
-1 whole organic lemon with skin. Make sure to scrub clean. Cut into quarters, remove seeds
-1 whole organic cucumber, scrubbed clean and cut into large chunks. Can use Zucchini if you don’t have cucumber
-2 cups of spinach or kale (kale will make it slightly bitter, spinach is preferred)
-Fresh ginger with skin cut off, about an inch long/wide. Can use jarred ginger if needed, about 1 tsp
-Half an organic apple (optional, if you prefer a slightly sweeter drink)
-2 tablespoons of Zen Basil Seeds (can use chia seeds as a replacement)
-1 tablespoon of organic spirulina powder
-2 large scoops of Vital Proteins Collagen Powder
-2 large drops of liquid ChlorophyllÂ
-1/4 cup of water, more if you’re not using a Vitamix
-Handful of ice
Now have yourself a beautiful, healthy day.
